Can I increase the size of the swatches?

Yes, within Product Options' Display Settings, you can adjust the swatch settings to decide if they should be Small, Medium, or Large. These are pre-determined sizes within the app.

If you'd like to fine-tune your swatch sizes, you can use custom CSS or add the ability to adjust the swatch size into your theme through Liquid code adjustments.

Can I customize the colour picker/date picker?

No, both the colour picker and date picker's display are dependent on which web browser you are using.
